Parmesan Crusted Salmon

Ingredients
1 large fillet of salmon (serves 5-6), skin off
1 cup panko bread crumbs
1 cup parmigiano reggiano, freshly grated
2 cloves garlic, crushed
1 tbsp dijon mustard
2 tbsp olive oil
Pinch of salt

Method
Preheat oven to 180’C fan forced. Lined a baking tray with baking paper.
In a small bowl, combine garlic and dijon mustard. Set aside. Meanwhile, in a medium bowl, combine parmesan, panko bread crumbs, olive oil and salt.
Lay salmon fillet out on baking paper. Alternatively, you can use individual fillets. Using the back of a spoon, spread garlic dijon all over the fillet. Top generously with panko topping and press down.
Bake in the oven for 25 minutes or until cooked through and golden on top. To get slightly more colour, once salmon is cooked, change your oven setting to grill and allow the panko bread crumbs to crisp up further. Don’t take your eyes off this as it can burn easily.
