Honey Soy Chicken Stir-Fry Recipe

Ingredients
- 400g chicken breast or thigh, thinly sliced
- 200g Singapore noodles
- 1 tbsp olive oil or sesame oil
- 4 cups vegetables of choice, diced
- 3 spring onions, sliced
For the honey soy sauce
- ¼ cup soy sauce
- 2 tbsp honey
- 1 tbsp oyster sauce
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated (or ½ tsp ground ginger)
- 1 tbsp water
- 1 tsp cornflour
Method
- Cook the noodles according to the packet instructions. Drain and set aside.
- In a small bowl, whisk together the soy sauce, honey, oyster sauce, garlic, ginger, water and cornflour. Set aside.
- Heat the oil in a large frying pan or wok over medium-high heat. Add the chicken and cook until golden and cooked through. Remove from the pan and set aside.
- Add the vegetables to the same pan and stir-fry for 3–4 minutes, until just tender but still slightly crisp. Return the chicken to the pan along with the cooked noodles.
- Pour over the honey soy sauce and toss everything together until well coated. Cook for another 1–2 minutes, until the sauce has thickened slightly and everything is heated through.
- Top with sliced spring onions and, if you like, sesame seeds and chilli flakes. Serve and enjoy!

What vegetables can I use?
