Ingredients

  • 4 cups rice bubbles
  • ⅓ cup honey
  • 1½ tbsp unsalted butter
  • 1 tsp vanilla extract
  • Pinch of salt

Method

  1. Line a 20cm square baking tin with baking paper.
  2. Add the honey and butter to a small saucepan over low-medium heat. Stir until melted and combined.
  3. Bring the mixture to a gentle simmer and cook for 2–3 minutes, stirring regularly, until glossy and slightly thickened. It will become frothy before beginning to change colour slightly — that's your cue to remove it from the heat.
  4. Stir through the vanilla and salt.
  5. Pour the honey mixture over the rice bubbles and gently fold until everything is evenly coated.
  6. Transfer to the prepared tin and spread evenly. Using a spatula or the back of a spoon, press the mixture down very firmly so the squares hold together.
  7. Refrigerate for at least 2 hours, or until firm, then remove from the tin and cut into 16 squares.
